Gingerbread Cookie Dough Protein Truffles




You know what I haven't done in a while?


IF ON THE OFF CHANCE YOU GUESSED PROTEIN TRUFFLES YOU WOULD BE RIGHT!


But, of course, we all know I have fully embraced holiday everything so I went for gingerbread. Gingerbread cookie dough. Yep yep YEP!


These are healthy, packed with protein and healthy fats and also -- of course, that wonderful gingerbread spice flavour.











More importantly, they are portable and adorable. Even better gluten free and if you use dark vegan chocolate, then they are vegan, too! Or you can leave them naked and then they are most definitely vegan and adorable and still delicious! You can even roll them in cinnamon sugar.... Ohhhh...why didn't I think of that sooner!











These portable holiday treats are perfect for a gym buddy, trainer, or, DUH...YOU! I think the flavour has the perfect balance of ginger, cinnamon and sweetness.









They are pretty much perfect and I love them forever and always and I want to put them in my pocket and keep them with me forever. Which in theory, I guess I could. But I would prefer to eat them and share them with you!








Let's see how to make these -- BTW it's VERY easy!








Gingerbread Cookie Dough Protein Truffles 


Yields 16 2-inch round bites 


Gluten Free, Dairy Free, Refined Sugar Free, Vegan Option


Ingredients:

  • 1 1/3 cups oats, ground into flour (or 1 cup oat flour)
  • 1 cup vanilla brown rice protein powder (SunWarrior)
  • 1/3 cup almond flour
  • 1/3 cup peanut flour (or more almond/oat flour)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/3 cup chocolate chips (there are vegan brands if you need vegan!) 
  • 1/2 cup liquid sweetener of choice (maple syrup, agave, brown rice syrup, or honey if not vegan) 
  • 1 tablespoon black-strap molasses
  • 1/2 cup peanut butter
  • 1/4 - 1/2 cup almond milk
  • 1/2 cup chocolate of choice for dipping (white, milk, dark, etc) 
  • 1 teaspoon coconut oil 
  • Optional: candies and sprinkles to decorate 


Directions:


  1. In a small saucepan heat up peanut butter, sweetener, molasses and spices until fully combined. Set to the side
  2. In a large bowl combine all remaining ingredients except the 1/2 cup chocolate and coconut oil for dipping our truffles
  3. Use the almond milk to help the mixture form a large ball of dough (use small amounts at a time!) 
  4. Once you have a large ball of 'dough' break off 2 tablespoons (roughly) at a time and roll them into balls -- place them into a pan lined with plastic wrap or foil until you have all your truffles
  5. Refrigerate for 20 - 30 minutes until set completely
  6. Melt your chocolate and coconut oil in a small microwave safe dish (30 - 60 seconds)
  7. Dip each truffle and place on a sheet of parchment paper, covering with sprinkles while the chocolate is wet
  8. Allow chocolate to set completely (in the fridge will speed this process along but it can be tricky!) 
  9. Keep truffles in an airtight container for up 2-3 days or up to a week in the fridge!













See! Easy! Stick these in a box and call it a day! 



As with my other protein creations I love the chewy texture and the powerful flavour punch these pack.







You could definitely substitute the vegan protein for whey protein although my only advice in that case is to really watch how much liquid you add. Whey protein is quite a bit stickier than the SunWarrior and can get too sticky really fast! Otherwise it's a delicious option as well!











I like the white chocolate with this but dark chocolate actually works really well and adds an amazing depth to the flavour palette of the truffles.

Enjoy Life makes the most delicious vegan chocolate chips -- I use those for all my vegan creations! Of course, use whatever works for you, though!


Toppings are my favourite part! I did shredded coconut, snowflake sprinkles, candy cane sprinkles, candy cane pieces, toffee pits, the world is your oyster!









They look beautiful no matter what you top them with!









And they all look the same once they are in your belly. Or my belly. So it doesn't really matter what you do, right?!

P.S I am obsessed with sprinkles. Seriously. Just look at how pretty these are!!!!!!!! Healthy? No. Beautiful? YES! That's enough for me.

  1. Ummm...there's actually no protein powder at all listed in the recipe? 1/2 cup Sunwarrior vanilla brown rice protein powder?
