Healthy Grasshopper Pie Cheesecake Brownies


St Patrick's Day obviously includes a lot of green.


And beer.






But I don't drink (yes I DRINK but not booze. Don't you be cheeky with me you sly, dog)!


But I DO eat.



And even better than that I like to MAKE things to EAT.



I know I am on some next level ish, right now. SO of course I had to develop a recipe for this beautious occasion. And to me the colour just has to match the flavour. If you are making something green it best be for a reason!


Speaking of green -- did you try these Matcha bars? Naturally coloured a mystical shade of green and packed with protein!








SO....GREEN!


Green can be a few things, right? We see green and it could be kale. If you put kale in your brownies we aren't friends. I am sorry. I don't give a damn how hipster kale is -- stay outta my brownies or I will KALE YOU!


Vegetable jokes.






Zucchini is green. I HAVE seen those in brownies. Avocados are green. Also seen those in brownies. Peas. Pea protein? That can be in brownies.





But none of those things are in THESE. Because to ME. ME! Green means MINT! And chocolate mint is my favourite favourite FAVA- FAVE combination of ALL TIME.


So I thought...grasshopper pie? That creamy minty-chocolate pie thing I have never made? 


I COULD.







But clearly, I did not.


Everyone loved my Raspberry Swirl Cheesecake Brownies so I decided to go the brownie cheesecake route!







I have NO regrets. These brownies are moist, flavourful and deeeeelicious. Just a hint of mint balanced with the creamy cheesecake layer. Ahhhh... That's the stuff. 








'Grasshopper Pie' Cheesecake Brownies 

Yields 8 large or 16 small brownies 

Gluten Free & Low Sugar



Ingredients:

For the Brownies


  • 3/4 cup oat flour 
  • 1/2 cup almond flour, sifted 
  • 1/4 cup cocoa powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract 
  • 2 large eggs, room temperature 
  • 2/3 cup coconut sugar (or granulated sweetener of choice) 
  • 1/2 cup greek yogurt or non-dairy yogurt, room temperature
  • 1/3 cup coconut oil, melted
  • 1/4 cup dark chocolate, melted

For the Cheesecake Swirl

  • 8 ounces light cream cheese, softened (1 brick) 
  • 1/4 cup organic cane sugar 
  • 1 egg, room temperature
  • 1 teaspoon vanilla extract 
  • Optional: Green Food Colouring 



Baker's Note: If you are in a pinch -- just use boxed brownies and follow the directions on the box. Make cheesecake swirl for on top and bake until the cheesecake springs to the touch and toothpick inserted in the center comes out clean!




Directions:




  1. Preheat oven to 350 
  2. Grease an 8-inch round pan and line with parchment paper
  3. In a small bowl sift all dry ingredients for the brownie batter and set aside
  4. In a large bowl combine all wet ingredients and blend thoroughly
  5. Add your dry ingredients to your wet ingredients and stir until fully combined
  6. Spread the brownie batter evenly into the pan 
  7. For the cheesecake layer mix all ingredients in a medium mixing bowl until smooth and pour on top of brownie layer
  8. Using a butter knife or toothpick swirl and marble the cheesecake and brownie layers together
  9. Bake for 35-40 minutes or until a toothpick inserted into the center of the brownies comes out clean and the cheesecake layer is set from the top
  10. Let brownies cool completely before serving
  11. Refrigerated leftovers keep for 3-5 days



Here is what it looks like out of the pan (you can cut it however you want -- I chose 8 large triangles. Which was super weird and I will never do it again):







And after cooling for half an hour or so...they slice like a dream.








And some gold coins. Because...leprechauns.







I love how flat they bake and how beautiful the swirl turns out. If Hulk ate brownies he would love these.







Do you think Hulk ate brownies? I liked Edward Norton as the Hulk. I actually just like Edward Norton in general. He seems like a guy I would want to be friends with and meet up with at a local Starbucks and just shoot the breeze with.


















DID MY MILLION PICTURES CONVINCE YOU?!?!? Seriously folks. You need to make these. Okay okay -- you don't like the chocolate mint combo? Just leave our the peppermint extract and proceed as usual! But then you will have to explain to all your guests why they thought they'd be chocolate mint but they aren't. YOU'LL HAVE TO EXPLAIN THOSE BAD CHOICES YOU MADE.







Pile these high, serve 'em with whipped coconut cream (SO GOOD) or ice cream. Or nice cream. Or nothing! Not even a fork because ya just don't even need it!


What are you doing for St. Patty's Day??? I miss being in university where everyone on campus would ditch class and be at the pub! It was great! .... For us, anyway ;) I just remember the campus being so alive.


Not to mention here in Canada we are finally leaving the -35 C territory which is cause for celebration!


So grab your rainbows and gold coins and make some brownies!
