No-Bake Vegan Protein Brownies





Brownies are a tricky thing. To ME the ideal brownie has a soft and chewy texture and is of course, chocolaty to the point of inappropriate chocolatiness.


They should also be brown.















Just in case that wasn't obvious.


I have made black bean brownies before and they were AWESOME. And gluten free. But they had sugar in them and they were yes-bake. These however...are no-bake. Which makes them hella convenient YO.









These are pretty much the best thing I have ever made in terms of chocolatey flavour. OH MY. These are soft and chewy and SO SO GOOD! A no-bake vegan brownie that is high in protein, gluten free, sugar free and amazing? UH WAHHHT.










I legitimately had no idea what I was doing when I made these. I just knew I wanted something sweet and amazing and ....chocolate. And then these happened! You can leave out the walnuts but for me they are 100% necessary for a genuine brownie experience.



And I should know....(please don't ask me to elaborate because I have no reason to believe I should know anything...shhh...just look at the brownies).











These are definitely a good treat to make for the health skeptic in your life. It will be a prank that's not really a prank at all defeating the purpose of calling it a prank. In fact it's actually really nice to make people healthy brownies. I clearly do not understand the definition of prank.


In fact the idea makes me totally uncomfortable because I find pranks to be mean and terrifying.











Anyways that is not here nor there. These are MOIST and CHOCOLATY and GOOD FOR YOU. So go make them.

No-Bake Vegan Protein Brownies 

Yields 16 Brownies

Gluten Free, Sugar Free, High Protein, Vegan 

Ingredients:


  • 1 1/3 cup oat flour
  • 1/3 cup peanut flour (or more oat flour)
  • 1/3 cup almond flour
  • 1 cup vanilla brown rice protein (SunWarrior)
  • 1/3 cup chopped walnuts 
  • 2 tablespoons cocoa powder
  • 1/2 cup dark chocolate nut butter spread (any brand/kind you choose)
  • 1/2 cup liquid sweetener (agave, maple syrup, brown rice syrup, coconut nectar, honey, etc)
  • 5 drops NOW Foods English Toffee Stevia Drops (optional) 
  • 1/4 - 1/3 cup almond milk 
  • For Ganache:
  • 1/3 cup dark chocolate chips
  • 1 tablespoon coconut oil 

Baker's Note: If you don't want to use the protein you can use a combination of  oat flour and almond flour (or more peanut flour) in it's place! The texture will change slightly but you will have a similar end product 


Directions:

  1. Line an 8x8 pan with aluminum foil or plastic wrap for easy clean up
  2. Mix all dry ingredients (except those for the ganache) in a large mixing bowl and stir until combined
  3. In a small sauce pan heat the nut butter, sweetener and stevia (if using) until thoroughly combined, stirring occasionally 
  4. Pour liquid mixture onto dry mixture using almond milk to add to mixture only until it forms a large ball (you may need less or more almond milk depending on the ingredients you use!)
  5. Press into lined pan until flat and even and place in the fridge to set for at least 30 minutes
  6. For ganache: melt all ingredients in a microwave safe bowl and stir until combined
  7. Pour over dough mixture and tap the pan to eliminate air bubbles
  8. Place in fridge to set for 30-60 minutes
  9. Cut into 16 squares and enjoy!
  10. Keep refrigerated if your climate is hot! 




That's it! Boom. You have brownies.












These are beauties. You can even add more cocoa if you'd like EXTRA CHOCOLATE. I keep looking for super dark cocoa but I cannot find any! I'd use that if I had it...but I don't....and I want to cry about it.


But I won't. Because I am an adult and adults eat brownies when they are sad.












Adults can also eat brownies for breakfast. 


I DID IT ONE TIME OKAY. JUST ONE TIME. 













Plus these have oats, protein, peanut butter and nuts. Thus they are breakfast food. This is obvious.




















I doubt you need convincing -- these are GREAT! AMAZING. UNBELIEVABLE. So make them and share them and eat them and do brownie things with them like camping. Wait...wrong brownies.











But you could, in theory, take these camping. Just don't come back to me when the bears all want in on this!





What is your favourite brownie recipe? I honestly used to love boxed mix brownies and the ones that came in cellophane from the grocery store -- I don't know the brand.  Pretty much anything chocolate is good to go for me. But it's nice to have a healthier option, too!
