Maple Pumpkin Pie Muffin Top Cookies


These cookies make the whole entire house smell like a gigantic warm delicious piece of pie!


I absolutely adore pumpkin (as I am sure is evident) and I made these cookies on a whim after a really long/not so fun day.


I am very much a person who is influenced by the weather and I just felt sooo....blah. So cookies were the natural cure to this ailment. Not only that but a warm, sweet, fragrant cakey pumpkin pie cookie.


You feel me, sista?



And boy oh boy do these warm the soul. Especially right out of the oven! These are so sweet and delicious and they are so soft and fluffy on the inside I could cry. They are exactly like muffin tops! And we all know those are the BEST part of the muffin (I always think of that Seinfeld episode when I think of muffin tops!).







When my younger brothers say something is REALLY good...then I know I have done something right. And everyone really loved these. They are soft and delicious but sturdy enough to hold up if you throw them in a lunch pal for a special treat for your little ones!
















Okay well...don't THROW them.... I don't know that they would stand up so well
 in that case. But, you know, toss them gently in a baggie or container!


















The recipe is very simple -- and you probably already have most of the ingredients! So if you are having a good day, a bad day, an okay day or I just really like pumpkin day...then these are for you!










Maple Pumpkin Pie Muffin Top Cookies 

Yields 18 - 22  large cookies

Gluten Free, Sugar Free, Vegan Option 

Ingredients:


  • 1 1/3 cup oat flour
  • 1 cup all purpose gluten free flour (I used Robin Hood's Gluten Free Flour)
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 1/3 cup white chocolate chips
  • 1/3 cup chopped walnuts 
  • 2 eggs or egg replacer equivalent/flax eggs 
  • 1/3 cup pumpkin puree or canned pumpkin
  • 1/3 cup greek yogurt or non-dairy yogurt
  • 1/3 cup coconut oil, melted
  • 1 teaspoon vanilla extract 
  • 1/2 cup maple syrup 
  • 5 drops Now Foods English Toffee Stevia Drops (Optional) 


Baker's Note: Chopped walnuts are really delicious but if you are nut-free leaving them out is just fine, too!

Directions:



  1. Preheat oven to 350 and line two baking sheets with parchment paper
  2. In a medium bowl, combine all dry ingredients together and set aside
  3. In a large bowl combine all wet ingredients until mixed well
  4. Add dry ingredients to wet, stirring until everything is fully combined
  5. Using a small ice cream scoop, scoop batter onto cookie sheet, pressing the tops down with a wet finger once you are done scooping all your cookies
  6. Bake each batch for 12 - 15 minutes until sides just begin to golden 
  7. Cool on a wire rack before serving 





And in a short amount of time -- your muffin tops are ready to go! These are so comforting. So so so comforting. Like a warm hug in cookie form. 












Sprinkle them with a little bit of cinnamon before baking to give them that extra little 'oh look how cozy and warm I am' vibe.











To tell you the truth I had to make a few batches of these cookies in a row because they would disappear before I could photograph them!


Sneaky cookies.










You can substitute the walnuts for something else and use dark chocolate in place of white chocolate chips. I do like the contrast of the white chips, though!








Hopefully the title enough convinces you that these cookies are a must. ESPECIALLY for the muffin top fans out there. Because it is simply cruel to toss away those bottoms -- just make these instead!



And for those of you concerned that this is the end of my pumpkin obsession....HA! Do not fret. It is only the beginning.... *evil laughs* Haa.. Ha ha...HA HA HA!!!

  1. Oh. My. Goodness. These are sooooooo awesome! I made them yesterday for a Halloween party last night and people loved them. I even got to tell them how (pretty much) healthy they are. So then I started seeing some people jam several in their mouths at a time. Haha! Thank you for a great, not-too-overly-pumpkin flavored, easy-to-make pumpkin cookie!
