Raw Vegan 'Melt in Your Mouth' Chocolates





Do you know 'Icy Squares'?!? My family and I were recently discuss this very subject very late on Saturday night -- I had totally forgotten about these treasures!







The chocolates are melty and smooth and luxurious and were square and thick, wrapped in foil and adorned with geometric colors of varying pleasing jewel shades.

Ohhhh I LOVED THOSE.









My grandmother used to keep a large cylindrical container in random places throughout her old house and I would probably eat the whole thing if left to my own devices.

I loved how melty and delicious these were. As it turns out that's thanks to the hydrogenated coconut oil in them!






Well today we look at a VERY simple raw, vegan, and sugar free version of those wonderful little squares of joy.

Valentines day is coming -- and these look especially cute as hearts -- wink wink!







I think depending on where you live these can stay unrefrigerated. I think they taste extra amazing cold so I keep them in there, though. Outside of the fridge they definitely last a good 1/2 an hour or so before they sweat a little bit -- but really, just eat them right away. You will want to do that, anyways.






You won't believe how easy this is -- trust me! You can pour them into any mold you like and even make chocolate bars with them! Yippeeeee!






Raw Vegan 'Melt in Your Mouth' Chocolates 

Gluten free, Sugar free, Vegan 


Ingredients:

  • 2/3 cup coconut oil, melted
  • 3 tablespoons dark cocoa powder
  • 1/4 cup liquid sweetener of choice
  • 5-10 drops liquid stevia (like the NOW Foods brand)
  • Optional: 1/4 teaspoon flavouring of choice: peppermint, vanilla, raspberry, maple, coconut, etc. 
  • Optional: 1-2 tablespoons raw cocoa butter (helps hold it all together)


Directions:

  1. Mix all ingredients into a large mixing bowl and beat together gently until smooth
  2. While stirring, pour liquid mixture into chocolate molds, muffin liners, or whatever you choose* -- tap gently on the counter to release air bubbles and refrigerate for at least 2 hours or overnight
  3. Release from molds and enjoy.
  4. Store leftovers in a cool, dry place!

*This is liquidy before it's set! Don't make your life too difficult by using a tiny mold. Bigger is better! And setting it on a tray before you start so you can put the tray in the fridge instead of splashing about the molds is a great tip! Also KEEP stirring. If  any of it settles the chocolate won't set properly*















Easy peasy. But really do keep stirring. I let one batch sit for 20 seconds only and it separated and the chocolate didn't set properly. I also found the cocoa butter helped immensely. And it adds a beautiful flavour!



I do love these jumbo hearts. Oh the beauties you find at the dollar store! These were for jello I think -- but I use them for everything!






Also please note that the roses are obviously not RAW. But I personally loved how they looked and I wanted to add a little somethin' somethin' to them for the photos. If you are gifting them to someone and want to make them special try sprinkling some raw coconut on them or chopped nuts. Or add that into your mixture! Delicious!







I hope you give these a go! They are so melt-in-your-mouthy it's insane. I love the dark and robust flavour and the mouthfeel of the coconut oil. It's all a party in your mouth. Such good times.
