Vanilla Bean Baked Donuts with Vanilla Glaze





When I first posted a picture of these donuts (you can see those very donuts here) to my Instagram -- I received a lovely comment from 'Z' asking when the recipe would be posted.

And it is FINALLY here. 

These donuts made my heart flutter. After being on a bit of a recipe posting hiatus I was itching so severely to get back into the kitchen. I  had orders, then I got sick, then I had orders, then I got even more sick.

And now my allergies are in full swing. OH GOOD.


But alas. I finally made my healthy donut recipe that I have been tinkering with. 


Before you run into the kitchen keep in mind:


  • You'll need a donut pan. Most kitchen stores will have them but I find them at Michael's and even Winners/Marshall's sometimes
  • You can use egg replacer or real eggs. I tested both!
  • My gluten free flour blend is equal parts coconut, oat, rice and tapioca flour but you can use whatever you choose!
  • Sprinkles are optional but so freaking cute
  • Take them out of the pan right away and turn them over onto a wire cooling rack
  • They are best the day of but don't worry. That won't be a problem ;) 





The best part of these donuts are that they're donuts.


Oh wait I screwed that up...ummm...OH that they are delicious.




DANGIT. NO THAT'S NOT IT EITHER!


Oh yeah that they are BAKED! So obviously that makes them instantly better for you.





They are beautiful to look at which makes them also good for your soul. 












I'm not wrong, right?!? I think these would look really cute at a baby shower or even a bridal shower on a dessert table.


I am OBSESSED with dessert tables. I am always so excited to see how people put things together and I love themed things. I say that a lot, I know. But it's true! I hope they never ever go out of style, EVER. Or I would be so sad.




You can use fun straws and coloured candies and little candy pearls and SO MANY OPTIONS!






And just as an aside...That photo above is my favourite photo ever. It makes me feel so happy inside. Sprinkles and pink and good lighting = amazing.


Soo enough of this let's talk recipes, y'all!




Healthy Vanilla Bean Donuts 



Yields 12-14 Donuts

Gluten Free, Refined Sugar Free, Vegan Option 

Ingredients:

  • 1 1/4 cup oat flour
  • 1/2 cup almond flour
  • 1/4 cup coconut flour 
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/2 cup organic coconut sugar, organic cane sugar or a mix of both
  • 3/4 cup vegan buttermilk*
  • 1 tablespoon vanilla bean paste 
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons greek yogurt, room temperature (or use applesauce) 
  • 2 tablespoons white chocolate, melted (or applesauce for vegan version)
  • Egg replacer for two eggs (2 teaspoons plus 4 tablespoons water)*

*I prefer egg replacer to flax eggs but you use whichever method you prefer! Of course you can substitute this with 2 whole large eggs which I also tested and yields amazing results!



For the Vanilla Glaze:


  • 1/4 cup almond or coconut milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon coconut oil 
  • 2 cups confectioner's sugar, sifted 
  • Optional Decorations: sprinkles, chocolate pieces, small candies, etc. 

For an alternate Vanilla Glaze:



Directions:



  1. Preheat oven to 400 degrees F 
  2. Grease/spray at least 2 donut pans and set aside (I use the Wilton brand pans and you can just use 1 and wash in between batches -- if you do make sure you COOL the pan before adding a new batch!)
  3. In a large mixing bowl combine all dry ingredients and whisk together
  4. Add in all wet ingredients and stir together until fully combined
  5. Scoop batter into a pastry bag or large ziploc bag, cut the tip off and pip your donuts into the pan ensuring it is no more than 2/3 of the way full -- with a wet finger pat down the peaks on the donuts left by the piping bag so your donuts are flat 
  6. Bake each batch of donuts for 10 - 12 minutes making sure to cool the pan off completely before you re-use it or use multiple pans
  7. Gently turn the pan upside down and gently agitate it and the donuts should fall right out -- put them on a wire rack to cool!
  8. Allow donuts to cool completely before glazing them!
  9. For the glaze add the milk and vanilla into a small saucepan and heat on medium until the mixture is hot but not boiling
  10. Remove from heat, add in confectioner's sugar and stir thoroughly until smooth
  11. Pour into a shallow bowl and set aside to thicken 
  12. Dip top half of donut into the glaze, gently wiggle the donut while upside down to get ride of excess, then place bottom half down onto parchment paper or baking sheet 
  13. You can dip multiple times for a thicker glaze!
  14. While glaze is wet add sprinkles and garnish 
  15. Allow to dry fully before packaging them 




And remember you can decorate them however you want! For a lower sugar option simply drizzle with dark chocolate and maybe some shredded coconut? Mmmmm.









DONUTS ON STICKS.





SO FUN!






As I was editing these pictures I was thinking how much more fun eating foods on sticks would be. Then I tried to figure out how you could get a donut onto a stick. I decided that while that would be a lot of fun it would not work, structurally.


Ah shucks.







Well they look pretty just kind of sitting there, too. BUT FOOD ON STICKS! Way cooler. Maybe one day! I bet we never thought we would have cake on sticks. But hey. Cake pops are a thing.



You could put donut HOLES on sticks! But it's not the same ;'(









I ACCIDENTALLY took a few bites. Oops? Texture-wise these donuts are fluffy and soft and packed with delicious vanilla bean sweetness.


They have that familiar donut taste but don't leave you feeling sick afterwards which is obviously ideal!







That's the one thing about my healthified desserts that is a huge bonus: PEOPLE DON'T FEEL SICK AFTER! You just eat it and it's delicious and then it's gone. Which is super sad, of course. But you shouldn't have to deal with cramps and bloating and feeling sick after eating a treat. Treats should be FUN!

I am a chocolate girl through and through. It's always like pulling teeth to get me to make things that aren't chocolate. But that being said I could easily have inhaled all of these.
