Protein {VEGAN} Caramel Sauce






Sometimes I lose my ability to use my words.

I make strange facial expressions and contort my mouth in amusement and bewilderment.

Seconds after realizing my brainchild of 'protein caramel' could be a reality my heart fluttered and the world around my swirled into a dizzying array of chocolate donuts and caramel ice cream.

Really, this all happened.

This healthy caramel sauce is pretty straightforward. There are no weird fats or processed sugars. No artificial colours. PLUS protein. Oh and they are vegan. Sticky, melty, caramel amazingness.

I cannot image a more fortunate marriage of ingredients even if I tried. Which I won't because I will save my energy to eat this:

Protein {VEGAN} Caramel Sauce 


Ingredients

  • 3 tablespoons coconut sugar
  • 1-2 tablespoons hot water
  • 2 tablespoons coconut oil
  • 1 scoop Vanilla SunWarrior Protein (or brown rice protein)
  • 2 packets Truvia (or stevia of choice)
  • 4-5 drops Now Brand English Toffee Stevia Drops 

Directions:

  1. In a small saucepan, heat your hot water (just enough to cover the sugar), coconut sugar and Truvia over medium heat until the crystals all break down and you have a dark brown simple syrup
  2. Remove from heat and add coconut oil, adding back onto heat if necessary to ensure oil completely melts
  3. Remove from heat (again) and add in remaining ingredients (protein powder and stevia drops) stirring quickly to avoid clumps
  4. Allow a few minutes for sauce to thicken to a sticky caramel consistency
  5. Serve on ice cream, brownies or Chocolate Caramel Protein Donuts or eat straight from the pot!

My preference was to serve these on my protein donuts which I will post the recipe for. The sauce is so thick it worked perfectly. These slightly harden making it perfect as a topping for donuts because once it sets it doesn't get stuck to anything else AKA you can stack them!

I was SO skeptical when I began making this. It looked weird and runny and dark and blah. Then I added the protein and the stevia drops and BOOM. Slowly it thickened and turned a warm brown...I don't know what wizardry made it happen but I am old enough to not ask questions anymore.

I used Sunwarrior Protein Powder which is a vegan, brown rice protein--and I really think that's what made the difference. If you don't have that specific brand, I think vanilla casein would work well, too.

Don't have the toffee drops? That's okay! If you do want them the NOW foods brand is great. I found it at a local health food store but many low-carb online stores have it, too! It just amps up the caramel flavour!





Because with caramel..texture is everything.





EVERYTHING.





And on the donuts? There are NO words.


NONE.



Okay, that was two words. But screw you precision! I cannot express to you my excitement to share this recipe with you. I really hope you try it, especially if you are trying to avoid certain food additives and artificial flavours/colours. Or if you have a vegan in your life to impress ;)

PLUS IT'S CARAMEL! What reason is there NOT to?
