Peanut Butter & Chocolate Protein Bites




Peanut butter is amazing. There is something so distinctly comforting to me about peanut butter. The mouth feel, the slight sweetness, the texture -- all of it!

Paired with chocolate? Get outta here!











Peanut Butter & Chocolate Protein Bites are a peanut butter version of my protein bars dipped in a high quality dark chocolate. As far as toppings go they range from sprinkles to a few little skor bits. SKOR. OH MY. So delicious that I cannot even describe it. 












These little lovelies are these Chocolate Turtles Protein Bars topped with a hazelnut!


My Aunt just returned from Europe and so naturally, I forced her to try one of them. The verdict? DELICIOUS! The right amount of peanut butter, a good chewy texture and ultimately the most satisfying little treat a peanut butter lover could ask for!

Peanut Butter & Chocolate Protein Bites 

Yields 16 2-inch round bites 
Gluten Free, Dairy Free, Refined Sugar Free, Vegan Option


Ingredients:

  • 1 1/3 cup oats, ground into flour (or 1 cup oat flour)
  • 1/2- 1 cup chocolate protein powder of choice* (Whey or Vegan protein powder like SunWarrior)
  • 1-2 tablespoons cocoa powder (depending on how chocolatey you want them!)
  • 1/3 cup peanut flour or PB2 (I used chocolate)
  • 1/3 cup peanuts, chopped
  • 1/3 cup honey or agave nectar
  • 1/2 cup peanut butter
  • 1/4 - 1/2 cup almond milk
  • 1/3 cup dark chocolate chunks or chips 


Directions:

  1. In a small saucepan melt the honey/agave and nut butter until fully combined
  2. In a large mixing bowl, combine all dry ingredients (oat flour, peanut flour, protein powder, chopped nuts and cocoa) and whisk together until combined.
  3. Add your warm nut butter mixture to your dry ingredients and mix together adding almond milk (or other non-dairy milk) to the mixture if it is too dry. It probably will be, so I used almond milk! I added it slowly using only enough to make the mixture form a large ball.
  4. Using your hands, take 1-2 tablespoons of your mixture and roll into a ball. Place onto a lined baking sheet and repeat until you're done!
  5. Set in the freezer for at least 1 hour. 
  6. Melt your dark chocolate in a microwave safe dish for 30 second increments, stirring each time, until fully melted. You may need more chocolate depending on how much you like on your PB bites!
  7. Dip the top half of the balls into chocolate, shake the excess and allow to dry on a baking sheet or parchment paper
  8. If you desire, after each ball has been dipped, add toppings like chopped nuts, sprinkles, skor bits or chocolate chips!
  9. Store in the fridge for up to a week or on the counter for 2-3 days (they are delicious cold, too!)

These are the cutest most adorable delicious little bites ever.





 Stack them up and put them into a cute little box as a great gift!











Or just admire them on your table as you dress them up all fancy like. 












 Definitely drink them with a nice tall glass of almond milk..











And definitely share... even though it's hard. Because sharing means you get to make another batch sometime soon!










I hope you try this recipe. I really loved the texture of having larger chunks of peanuts with the chocolate and just...MMM... I remember thinking in my head one was probably enough. BUT there were two kinds I made, and I should probably try both -- because...science?

Anyways they are delicious and a must try if you love peanut butter! Also I suggest buying miniature peanut butter cups, too. Because they are adorable.

    1. Hello! Sorry about the error, I just edited it. It should read that you add 2 tablespoons of cocoa in step one if you do not have chocolate protein powder. If you do feel free to omit this step!

    3. Hi Anonymous! I buy certified gluten free oats. Some people with gluten allergies do react to oats just like they react to wheat, though, so they would not be able to use oats! I tolerate oats just fine and mine are gluten free :)

    3. Hi Leah! There is a spreadsheet for nutritional information here that can give you a rough guideline -- the serving size will change depending on how many 'bites' you make!   4. Been searching the web high and low for good protein/energy balls as I always need a little pick me up snack throughout the day and these type of things are exactly what I need!
    These look delicious so I'll definitely be trying them!! Also going to try the protein bar recipe too!

  5. Hey! So I'm a very inexperienced in the kitchen and was confused by some of the steps. So in step one we are suppose to melt honey, peanut butter, and the protein powder together? The whole cocoa part is confusing. And secondly, in step 2 you said combine all the dry ingredients; so all i need to do is mix the oat flour and the peanut flour together? Those are the only dry ingredients I see left. I tried this and failed miserably, so I thought I'd see if you can clear some things up. thanks!
